Beet Box bakery shutters its doors

Beet Box Bakery, located in Five Points, is yet another business in Denver that permanently closed due to the economic impact of the COVID-19 pandemic.

Beet Box began in 2009 with owners Blair Ednie and Michael Craig, and a team of five others, selling their treats in bulk directly to local cafes and restaurants. Their creations proved to be very popular, and in 2013, Ednie and Craig opened their very own storefront, selling delicious baked goods such as croissants, donuts and a variety of bread. They also served up delicious cakes, brownies and other decadent desserts, all of which were vegan. Plenty of gluten-free options were on the menu as well, making tasty treats accessible to those with various dietary restrictions.

Nov. 21 was the cafe’s last day in business. The line for the last taste of their popular snacks stretched the length of two blocks and piqued the curiosity of pedestrians, neighbors and vehicles driving by. Several passers-by asked those in line what they were waiting for, and were often met with declarations of love for the cafe.

It was with heavy hearts that Denver’s first all-vegan cafe closed its doors, but even the most popular brick-and-mortar businesses have not been safe from the economic fallout of the pandemic.

“We want to thank our employees, past and present, and especially those who have made it happen, week after week, through these tumultuous last months,” the owners wrote in a post on Facebook. “We consider ourselves lucky to accomplish most of what we set out to do, but the time has come to move on.”

A GoFundMe has been set up to support the employees as they look for new jobs. Hopefully, Ednie and Craig have something in store for the future, as their creations have become a staple for many Denver vegans. The absence of their delicious food will most certainly be felt by many.
